Ingredients For Sabudana Khichdi Recipe

  • 1 cup sabudana (sago pearls)
  • 1 cup water, for soaking
  • 2 medium potatoes, boiled and cubed
  • ½ cup roasted peanuts, coarsely crushed
  • 1 tsp cumin seeds
  • 1 green chilli, finely chopped
  • Sendha namak, to taste
  • 2 tbsp Desi Ghee
  • Fresh coriander, for garnish
  • A small squeeze of lemon
  • Chilled dahi, for serving

Sabudana Water Ratio

Use one cup of water for every cup of sabudana, nothing more. This one-to-one ratio keeps the pearls from turning sticky or staying hard in the centre.

How to Soak Sabudana

Wash the sabudana two or three times under running water until it runs fairly clear. Drain it, add the measured water, cover and let it sit for 4 to 6 hours, or overnight. It's ready when a pearl flattens easily between your fingers.

How to Make Sabudana Khichdi

Heat the Pure Desi Ghee in a pan on medium flame and add the cumin seeds. Once they crackle, add the green chilli and let it sizzle for a few seconds.

Add the boiled potato cubes and cook for 2 to 3 minutes until lightly golden. Then add the soaked sabudana and crushed peanuts and mix gently so the pearls don't break.

Sprinkle in the sendha namak. And let it cook on low to medium heat for 5 to 7 minutes. Stirring softly, until the sabudana turns soft and slightly translucent.

Turn off the heat, add a squeeze of lemon and garnish with coriander. Serve hot, with a bowl of chilled dahi on the side.

FAQs

Can I skip the potatoes?

Yes, it's optional. The khichdi still tastes good with just peanuts, sabudana and a good tempering of ghee and cumin.

Why does my khichdi turn mushy?

Usually from too much water while soaking, or cooking on high heat. Sticking to the one to one water ratio and a low to medium flame helps avoid this.

Can I use oil instead of ghee?

You can but the taste will be quite different. Madhusudan Desi Ghee gives this dish its traditional flavour, which oil simply doesn't replicate.

What should I serve with sabudana khichdi?

Chilled dahi is the classic pairing, since its coolness balances the richness of the ghee so well.
