How to Make Rajgira Paratha Stuffed With Paneer

Step 1: Make the dough - Mix the rajgira atta, mashed potato, sendha namak and ghee in a bowl. Add warm water little by little. Knead into a soft dough. Rajgira has no gluten so the potato helps it hold together.

Step 2: Rest it - Cover the dough for 10 minutes.

Step 3: Prepare the filling - Mix the crumbled paneer, green chilli, cumin powder, coriander and sendha namak. Keep it dry. A wet filling will tear the paratha.

Step 4: Stuffing - Take a lemon sized ball of dough. Flatten it in your palm. Place a spoon of filling in the centre. Bring the edges together and seal well.

Step 5: Roll gently - Place the ball on a ghee greased surface. Press and roll slowly.

Step 6: Cook - Heat a tawa on medium flame. Place the paratha and cook for a minute. Flip it. Add a little Madhusudan Desi Ghee on both sides. Cook until golden spots appear.

Step 7: Serve - Serve hot with chilled dahi.

Tips for Soft Rajgira Parathas

  • Use warm water for the dough.
  • Do not add too much filling.
  • Roll thick, not thin. Thin rajgira parathas break.
  • Cook on medium heat only.
  • Ghee gives the best aroma. Do not skip it.
